Grandma's Wax's Baked Beans

Ingredients
Directions
1 pound dried 'red eye' beans (not pinto)3/4 cup packed dark brown sugar1/3-1/2 cup deli mustard1 medium onion (whole)3 beef ribssalt and pepper to taste
Pick over and soak beans in water for 6 hours or overnight. Drain and rinse.
In large soup pot place beef ribs and cover with beans, add onion (whole) and mustard and water to cover. Bring to boil.
Add sugar and (salt and pepper to taste) stir well, reduce heat, cover loosly and simmer 1.5 hours.
Remove meat from bones, chop meat and readd. (discard bones)
Transfer all ingredients to a bean pot (or oven proof casserole with cover).
Bake at 325 (f) for 5 hrs.
Turn oven off, (beans may be left in oven for several hours, if you used 'time-bake' to turn off the oven).
