bison chili with hominy

Ingredients
1 lb. ground bison (buffalo)1 cup chopped onion2 garlic cloves, minced1/2 cup diced celery1 cup diced carrot2 - 12-oz cans diced tomatoes, no salt added3/4 cup canned hominy (posole), rinsed3 Tbsp chili powder2 tsp ground cumin1 tsp dried oregano1/2 cup fresh-cut refrigerated salsa
Directions
Brown ground bison, drain. Add chopped vegetables and simmer for 5 minutes. Add tomatoes, hominy, and spices, stir and simmer for 30 more minutes. Add fresh salsa near end of cooking. Serve with shredded cheese on top if desired. Makes approximately 10 1-cup servings.
