8 oz edamame, 2 1/2 tbsp lemon juice, 2 medium clove of garlic, coarsely chopped, 1 tbsp fresh flat-leaf parsley, coarsely chopped, 1/ tsp salt, 1 tsp evoo, 3 tbsp fat-free plain yogurt
cook edamame as directed and put in a food processor. combine lemon juice, garlic, parsley, and salt. process until the mixture is paste-like. with food processor on slowly drizzle evoo through the top until well mixed. add the yogurt and process just until combined.
serve immediately or store in air tight container for up to 3 days.
