Red Curry Chicken with Spinach

16 oz boneless/skinless chicken breasts4 cups Fresh Spinach1 can light coconut milk1 can chicken broth1 tbsp fish sauce1 - 3 tsp red curry paste (to taste)1 tsp fresh ginger4 cups cooked whole wheat pasta
Makes 4 servings
1. Cut chicken into strips and cook in non-stick pan with non-stick spray until done. Set Aside
2. Wash spinach, rinse and cook in pot until done -- approx 4 - 8 minutes. Set Aside
3. In sauce pan add lite coconut milk, chicken broth, fish sauch, red curry paste and ginger. Stir and simmer until warm and blended.
4. Toss chicken and spinach into pasta and heat 1-2 minutes.
5. Serve over cooked pasta.
