Spinach, Chicken & Bacon Pasta

Ingredients

1 Cup chopped chicken breast (cooked)2 cups vegetable pasta (bow ties preferred)2 cups fresh chopped spinach1 tbsp dried basil1/4 cup grated Parmesan cheese3 strips of bacon1 tbsp olive oil1/4 cup finely chopped onion1 tsp minced garlic (2 cloves)
1. Boil water & add pasta, stir, and let cook 8 minutes or until al dente.
2. While that cooks, combine spinach, basil and parm cheese in serving dish.
3. Cook bacon, remove & chop. Add to spinach mix.
4. Drain off some or all of the grease. In that same pan heat olive oil and saute onion and garlic.
5. When onions are translucent, add to the spinach mix and stir to wilt the spinach. Add drained pasta and chicken.
6. Toss and serve warm or cold. (I prefer warm.)
