Gluten Free Apple-Blueberry Pancakes

Ingredients
Pancake batter – mix all these together in a small bowl½ cup Bob’s Red Mill Finely ground Almond Meal/Flour1 egg¼ cup water½ packet of Truvia2 tsp cinnamonFruit Topping1tbsp unsalted butter½ medium apple (cubed)¾ cup blackberriesCinnamon to taste
Directions
1. Pancake batter – mix all these together in a small bowl

2. As you heat up the skillet for the pancake, start making the fruit topping

3. In a sauce pan, melt butter and add the rest of the ingredients. Allow to simmer as you are making the pancakes.

4. Spray skillet with buttery non-stick spray (or something to your liking) and pour pancake mixture as you see fit. In the picture, my mixture made three pancakes.

Makes three 3 ½ “ round pancakes with lots of fruit to top.
