Blueberry Muffins with LOTS of Blueberries

6 Tbls. unsalted butter, softened3/4 c. sugar2 eggs1/2 c. milk1 tsp. imitation vanilla extract1 c. all-purpose flour1 c. whole wheat flour2 Tbls. baking powder1/4 tsp. salt2 1/2 c. fresh blueberries
Preheat the oven to 375. Insert paper liners or coat muffin pans with non-stick spray. In a large bowl, cream the butter and sugar. Add the eggs, and stir in the milk and vanilla. In another bowl, sift in the dry ingredients. Stire them into the butter and sugar mixture, then fold in the blueberries. Fill muffin cups with 1/3 cup of batter. Bake for 20-25 minutes, or until light brown. Makes 12 muffins.
