Barley and Tomato Soup

Ingredients
Directions
1 cup celery, diced1 medium onion, chopped1 cup mushrooms, sliced1 cup carrots, sliced1/2 cup peas, fresh1/2 cup broccoli, chopped2 cups cherry tomatoes, cut in half3 cups water1/5 cup barley, uncooked1 tsp pepper1 tbsp paprika10 sprigs parsley, chopped1 clove garlic, chopped
Place water in a 5 quart soup pan.
Add celery, onion, carrots, peas and broccoli.
Bring to boil and lower temperature to simmer.
Cook for 15 minutes.
Add remaining ingredients and continue cooking for an additional 30 minutes.
Serve in bowl with stone ground crackers.
