Lightened-Up Apple Crisp

Ingredients
3 medium baking apples, cored, sliced thin1 tsp cinnamon2 Tbsp sugar2 Tbsp flourTopping:1 cup quick oats1 tsp vanilla1/2 tsp cinnamon1/4 cup brown sugar2 Tbsp heart-healthy margarine
Directions
Mix first four ingredients and place into 9-inch (square or round) baking dish.

In small bowl, mix topping ingredients until crumbly. Sprinkle topping over the apples.

Bake at 325 degrees until apples are soft and topping is golden brown (about 30 minutes).

    I love the crunchiness of the oats, and the vanilla is a nice touch. I subbed one Tbsp of honey for 1 Tbsp of sugar, and added 1/2 tsp of allspice. - 9/23/07

    I made this to take to a friend's house for Dessert...it was a hit! I did make a couple changes..... using significantly more apples, SPLENDA, more cinnamon, and omitting the Vanilla. I topped it with Fat Free Cool Whip. YUM! - 3/20/07

    Great way to reduce the high fat regular apple crisp recipe! I, too, increased the number of apples and used Splenda brown sugar (blend) which calls for half the amount of sugar. Why can't I eat this for breakfast since it's fruit and oats? Yum.... - 11/17/09

    I tried this receipe this weekend, however I only used the topping part and I used Cherry pie filling as my base. It was delicious- added a little whip cream. Definitely a keeper and only took about 5 minutes prep and then 25 minutes in the oven. - 11/10/08

    I thought this was okay. It had a good taste, but seemed to be too dry. I noticed some of the other recipes added apple juice or used apple pie filling. Maybe that would help. I will try this again and try a few substitutions. - 4/10/08
