Pat's Potato Salad w/lot of fresh veggies (1 serving = 4oz)

Ingredients
3 pounds of potatoes (about 9 cups)90 g onions diced150 g celery diced150 g green peppers (bell) diced200 g radishes diced215 g Zesty Spears Vlasic diced (about 6 spears)5 large hard boiled eggs chopped2 tsp garlic minced210 g of low-fat sour cream (about 3/4 cup)210 g of Miracle Whip Orignal Dressing (about 3/4 cup)1/3 c Apple Cider Vinegar1 1/2 teas. dry mustard1 teas. seal salt1 teas. coarse ground black pepper
Directions
Boil potatoes (leave them a little on the firm side), cut to size you prefer for your potato salad. Add next 6 ingredients.

In separate bowl mix the 2 tsp. of minced garlic, low-fat sour cream, Miracle Whip Dressing, dry mustard, salt & pepper. Mix well and then pour over potato salad diced/chopped ingredients. Toss gently to coat all well! Cover and chill!

Use Light or Fat Free Miracle Whip Dressing to cut down calories.

Yield: about 29 (4 oz servings)
