Brenda's Sirloin, Vidalia Onion, and Spinach Salad

10 oz. fresh spinach, rinsed and trimmed1/2 red bell pepper, sliced thin3 T. olive oil1/2 lb. sirloin steak, trimmed, sliced thin2 Vidalia onions3 T. balsamic vinegar1 tsp Dijon mustard2 T. honey1 tsp. grated gingerSalt and pepper to taste
Place spinach and red pepper on a large serving platter. Set aside. In a large skillet, heat olive oil over medium-high heat. Sauté steak quickly until medium rare. Remove. In remaining oil, sauté onion slices until translucent. Stir in remainiing ingredients. Bring to a boil. Quickly stir in steak and spoon over spinach.
