Cold Bulgur and Chicken Salad

Ingredients
* Bulgur, dry, 1 cup * Mushrooms, fresh, 190 grams * Chicken Breast, no skin, 12.75 ounces * Asparagus, fresh, 200 grams * Red Ripe Tomatoes, 260 grams * Parsley, 1.5c chopped * *Ken's Northen Italian w/Basil &Romano Lite Dressing, 8 tbsp * Lemon juice, 2 tbsp * *Artichoke hearts canned, 3 serving
Directions
Boil bulgur in 2.25 cups of water for 20-25 mins. When done spread on cookieheet to cool. Saute cook chicken breast in pan with salt and pepper. Once cooked dice and let cool. Blanch asparagus, and plunge into ice water. Once cool, chop into bite size pieces. Chop parsley, tomatoes, mushrooms, artichoke hearts. Put all ingredients, except bulgur in large bowl. Add dressing and fresh squeezed lemon juice. Mix well together. Add bulgur, and mix. This made 10, 1 cup servings.
