Cucumber Sandwich Spread

* Cucumber (peeled), 2 medium * Yogurt, plain, low fat, 1.5 cup * *Kraft Mayo with Olive Oil (reduced fat mayonnaise), 3 tbsp * *Onion powder, 1/4 tsp
(Prep time is more like 20 min. + 2 days.)
Measure about 1.5 cups of plain, low fat yogurt - pour into a fine mesh sieve w/ a coffee filter and strain off whey (place over a bowl). Cover w/ saran wrap and place it in the fridge for about 2 days. This should leave you with about 3/4 cup of thickened yogurt (about the consistency of cream cheese).
Peel, grate and drain two medium sized cucumbers. Get as much water off as possible.
Mix thickened yogurt with mayo and onion powder. Add cucumbers and mix well. Spread over bread, tortilla, etc.
Makes 9 quarter cup servings.
