Simple Strawberry Spinach Salad

1 10 oz. bag of fresh spinach3 green onions or scallions, chopped2 cups (1 pint) fresh strawberries, cut into bite sized pieces1 orange, seeded, and sectioned1/4 cup cashews, coarsely choppedDressing3 Tblsp. honey1/2 tsp. salt1/2 tsp. mustard (yellow or dry)1/2 cup olive oil2 Tbsp. vinegar
Wash spinach, remove stems and keep chilled
Cut up onion and strawberries. Cut each orange section into 3 or 4 pieces. Coarsely chop cashews. Add these ingredients to the spinach and continue to chill.
Wisk together the dressing ingredients. Pour the dressing over salad immediately before serving or serve it on the side.
