Amanda's Crock Pot Black Bean Soup

Ingredients
1 16 oz bag of black beans1 green bellpepper2 garlic cloves1 can fire roasted tomatos1 quart low sodium chicken stock1 onionSpices: cumin, chili powder, chipolte powder, salt and pepper to taste
Directions
soak beans over night

in crock pot-add beans, chopped veggies, browned sausage, and can of tomatos

cover with chicken stock and water if needed

cook on low for 6-8 hours

take about 1/2 of the beans (no sausage) out and blend together in blender for creamier soup

makes approx 10: 1.5 cup servings.

serve over brown rice (.25 cup) (optional) and top with reduced fat sour cream/shredded cheese (optional)
