Cashew Chicken

16 oz chicken breast 1 clove garlic minced 1 Tbsp sesame oil2-3 Tbsp soy sauce (I use 3)1 cup chicken broth + 1/3 cup water1 cup sliced celery1 cup sliced onion1 1/2 Tbsp cornstarch 2 oz naturally roasted cashews, chopped
Cut chicken into 2 x 1/2 x 1/2 -inch strips. In a meium skillet over medium-high heat, saute chicken in a little oil spray until done; remove from pan and keep warm.
Add the celery and onion with the sesame oil (and any other veggies if desired) Saute until crisp tender. Mix the cornstarch with the COLD chicken broth. Add to pan with remaining ingredients including chicken and cashews. Boil for a minute to thicken.
