Asian-Inspired Chicken Salad

Ingredients
3 oz. chicken breast (skinless), cut into 1/2 inch pieces2 tbsp. plain Greek yogurt1/2 tbsp. mayo1 tsp. sesame oil1 tsp. soy sauce1/2 tsp. five spice powder1/8 tsp. wasabi powder1/2 tsp. powdered ginger1/8 tsp. cayenne pepper1/3 cup diced red bell pepper1/4 cup diced cucumber3 scallions, diced (white and light green parts only)
Directions
Sprinkle the chicken pieces with 1/4 tsp. five spice powder and sautee in a small skillet over medium-high heat for 5 minutes, or until cooked through. Set aside to cool.

In a medium bowl, gently whisk together the yogurt, mayonnaise, oil, soy sauce, and spices. Taste this sauce and adjust the seasonings if you need to -- I like something a little spicier, so I usually use more wasabi.

Stir in the pepper, cucumber, and scallions, then gently fold in the cooked chicken.

Allow to sit in the fridge (or your picnic basket with an ice pack!) for at least 30 minutes before serving.

Makes enough for 2 sandwiches.
