Spanish Bean Stew

Ingredients
20 oz bag of dry 16 bean soup mix , soaked overnight, rinsed and drained6 cups of hot water3 large Knorr bouillon cubes1/2 green pepper, chopped1 medium onion, chopped1/2 tsp granulated garlic 2 stalks of celery, chopped2 Tbsp of Sofrito
Directions
Combine all ingredients in large pot.
Bring to a boil.
Simmer gently with lid slightly askew to allow steam out a bit.
Cook, stirring occasionally until desired tenerness is achieved. Test several beans as some may get tender before others.
Makes 10 1-cup servings.
