3 eggs1/2 tsp. Cream of Tartar2 TBLS Soy Flour1/4 cup Cottage Cheese1 pkt. Splenda or Artifical Sweenter
Preheat oven to 300 degrees. Oil small loaf pan with vegetable spray.
Separate eggs; beat egg whites with electric mixer until frothy. Add cream of tartar and beat until stiff peaks form, but whites are still moist.
Combine egg yolks, cottage cheese, soy flour, and sweenener and fold into egg whites. Do not overmix.
Pour into prepared pan and bake 40-45 minutes or until loaf is lightly browned.
