Pork Tenderloin with Apple and Rosemary

2 tsp canola oil8 oz pork tenderloin, cut into 2 pieces1 small onion, thinly sliced0.5 tsp dried rosemary0.25 tsp curry powder0.25 apple juice1 tsp cider vinegar1 firm apple, cored, halved and thinly sliced2 tsp currants
Heat oil in a nonstick skillet over a medium-high heat. Sear the pork on all sides, then remove to a plate and tent with foil.
Lower the heat to medium-low, add the onion, rosemary, and curry powder, and cook until the onions soften, about 5 minutes. Add the apples and currants and return the pork to the pan. Cover and cook for about 15 minutes, until the pork is just cooked through.
Slice the pork and serve with the apples and onions.
