Squash Yellow Sautéed

2 TBS EVOO1 medium sweet onion diced1 tsp salt3 cloves garlic, minced (I use 6 tsps)10 basil leaves, thinly sliced2 tsp fresh thyme, chopped2 medium yellow squash (1-1/2 pounds), cut into 1/2” dices2 TBS freshly grated parmigiano reggiano
Heat the olive oil in a large sauté pan over medium heat. When it is hot and shimmering, stir in the onion and season with a light sprinkling of salt and pepper. Cook until the onion is soft but not browned, about 4 to 6 minutes.
Add the garlic, basil, and thyme, stir to combine and sauté until the garlic becomes fragrant, about 1 mnute or so. Toss in the squash and cook over low heat until it is soft. Sprinkle with the parmesan, cover with a lid and cook until the cheese is melted.
