Gazpacho (Adapted from "Moosewood Cookbook")

Ingredients
4 Cups cold tomato juice1 small, well-minced onion2 cups freshly diced tomatoes1 cup minced green pepper1 tsp honey2 cloves garlic, crushed1 diced cucumber2 scallions, choppedJuice of 1/2 lemonJuice of 1 lime2 tbsp red wine vinegar1tsp tarragon1 tsp basil1/2 avocado (optional)dash of ground cumindash of tabasco sauce2 tbsp olive oilblack pepper to taste
Directions
Combine all ingredients and chill for at least 2 hours - YUM!

Also, it's nice if you puree some or all of it.
