Black Bean & Sweet Potato Soup

Ingredients
2 cups black beans (soaked overnight, drained & washed)1 pork soup bone or spare rib1 onion, chopped1 sweet potato chopped2-3 cloves garlic chopped1 Can Tomatoes 28 oz50 oz water or fill tomato can twice1 TBS Apple Cedar Vinegar or White Wine Vinegar1 Tsp Cumin1-2 Bay LeavesOptional- Cilantro, Lime Juice and Yogurt
Directions
Saute onions 2-3 minutes add garlic and sweet potato and saute another 1-2 minutes stir cumin. Add canned tomatoes and two cans of water. Stir in vinegar and bay leaves.
Bring to boil.
cook on low/medium heat with cover for 2-3 hours. Stir occasionally.
Serve with fresh cilantro, lime juice and yogurt. All optional.
