Shrimp Cocktail for Dinner

Ingredients
2 pound bag frozen shrimp, deveined, peels on1/2 jar whole allspice2-3 cinnamon sticks2-3 whole bay leavesdash cayenne pepperKetchupHorseradish
Directions
In large soup pan, fill 2/3 with water, add whole allspice, cinnamon sticks, bay leaves and cayenne pepper. Cover with a lid and bring water to a boil.

When water is boiling pour in entire bag of frozen shrimp. Cook for another 2-3 minutes, until shrimp begin to float. Do not overcook!

While shrimp is cooking, prepare an ice bath by filling a bowl with some ice and water.

When shrimp is cookied, drain in colander and quickly run cold water over the shrimp, then dump shrimp into ice bath to stop cooking process. Keep cinnamon, allspice, etc with shrimp.

Allow shrimp to sit in ice bath for several minutes, then drain water. Transfer shrimp to a ziploc bag-spices and remaining ice should go in the bag too. Put the shrimp in the refrigerator overnight.

When ready to serve, lay shrimp on platter with some ice. Prepare cocktail sauce to taste by combining ketchup and horseradish to taste. Peel shrimp as you eat!
