1/2 cup dry oatmeal 1/2 cup buttermilk or sour milk (or plain yogurt)1 medium egg 2 Tbsp brown sugar 1 Tbsp olive oil 1 Tbsp applesacue1/4 cup whole wheat flour 1/4 cup AP flour1 scoop vanilla protein powder1/4 teaspoon each baking soda & salt 1/2 teaspoon baking powder
In a large bowl combine the oatmeal and buttermilk. Let it stand for a few minutes, for the oatmeal to absorb some of the buttermilk. Add the egg, sugar and oil. Beat very well with a wire whisk. Add the flour, protein powder, baking soda, salt and baking powder. Mix again, until evenly moistened. Do not over beat. It should only take about a 20 or 30 strokes by hand to mix it up enough. Spoon the batter into 6 well oiled muffin cups. Bake at 400 degrees for about 20 minutes. Serve hot.
*If you like, you may add 1/2-cup of raisins or a cup of chopped apple to the batter, right after mixing in the flour.
