Fish Tacos w Halibut

2 lbs halibutsalt and peppercooking spray 1 limehot sauce1 jalapeno, seeded and chopped1 c cilantro leaves3 sprigs fresh mint3 tbsp grainy mustard2 tbsp red wine vinegar1/3 c extra virgin olive oil1/2 red onion, finely chopped**not incl in calorie count: taco shell (use hard, soft or large lettuce leaves for wraps)
Heat grill or non stick pan over high heat; spray w cooking spray. Place fish on pan (grill), season w salt and pepper and cook approx 5 min on each side, until opaque.
Place jalapeno in food processor w cilantro, mint, mustard and vinegar. Turn processor on and stream in oil. Season w salt and pepper.
Take fish off grill and place on serving plate, breaking into chunks. Squeeze lime over fish, add a few drops of hot sauce.
Pile fish into taco shells (hard, soft or lettuce), top w sauce and onions.
