2 cups fresh spinach1/2 cup egg beaters1/4 cup shredded mozzarella (part skim)
Directions
Sautee spinach for about 3 mins
Add Egg Beaters & allow to cook mostly through
Top with mozzarella, fold in half, and allow to finish cooking through
