German Potato Salad

peel 4 med to large potatoes or for a short cut use 2 cans of sliced potatoes but this adds sodium.4 slices of turkey bacon or Morning Star Bacon for Vegetarian1 tablespoon of flour2 tablespoons of sugar or sugar substitute1/3 cup of water1/4 cup of white wine vinegar1/4 cup diced onion1-tablespoon brown mustard1-teaspoon celery seed1-teaspoon paprika
If not using canned potatoes peel and boil potatoes until they can be forked. Then remove from water and cut the potatoes into slices. Place in bowl until later.
Fry the turkey or Morning Star bacon until browned remove from frying pan and crumble.
Melt 2 tablespoons of light butter and sauté the onions until tender. Add the tablespoon of flour and 2 tablespoons of sugar, stirring consistently. Add the celery seeds, water, and white wine vinegar; add the potato slices and the bacon. Heat through. Serves 4.
