Baked Doughnut Holes

2 Tbs olive oil1/2 C sucanat 2 egg whites or 1/4 C egg substitute1 teas vanilla2/3 C skim milk2 C whole wheat flour1 Tbs baking powder1/2 teas nutmegTopping:1.5 Tbs butter1/2 C sucanat2 teas cinnamon
Preheat oven to 400. Cream oil, 1/2 C sucanat, and egg whites. Add vanilla and skim milk. stir well. Soft dry ingredients and add gradually to creamed mixture. Lightly oil small muffin tins and fill 2/3 full with batter. Bake 15-18 mins.
While donuts are baking prepare topping. Brush warm donuts with melted butter and roll in cinnamon sugar mixture.

Sucanat is a brand name of whole cane sugar, so I used Sugar in the Raw which is what I had in the cupboard. It seemed to work out just fine. The only challenge was it didn't want to stick very well to the outside, so sucanat may be ground a little finer. But overall, they tasted great! - 6/11/13

No rating from me yet ... I need to discover how it will work with a sugar most of us have on hand - not some unusual, hard-to-find/pricy, ingredient like sucanat! While investigating substitutes I see turbinado/sugar-in-the-raw may work, but it may be sweeter than the sucanat. Any advice? - 5/23/13
