Sweet & Sour Chicken with Pineapple

* 2 chicken breasts* 5 scallions* 1/2 cup green pepper* 4 tablespoons red wine vinegar* 2 tablespoons cornstarch* 1 cup canned pineapple* 1 tablespoon Splenda brown sugar* 4 tablespoons ketchup* 1 cup low sodium chicken broth* 1 cup brown rice (cooked)
* Cut chicken into chunks and cook in pan with cooking spray until no longer pink
* Cook scallions and green pepper in pan with cooking spray until crisp tender
* Mix vinegar, cornstarch, chicken broth, brown sugar, and ketchup together. Add to chicken and stir constantly until sauce thickens
* Add cooked scallions and green pepper, stir in pineapple, cover and cook for 2 minutes or until heated through
* Serve over brown rice
