Sweet Potato Muffins

Ingredients
1 ½ cups all-purpose flour 1 1/2 scoops Whey Sensation Protein Powder 1 tbsp. baking powder 1/2 tsp salt1 tsp cinnamon dash of nutmeg1 egg 1/2 cup plain low fat yogurt1 1/2 cup mashed sweet potatoes 1 mashed ripe banana2 Tbsp honey1 Tbsp olive oil½ cup raisins (optional)
Directions
Heat oven to 375 degrees Fahrenheit. Spray 12 regular muffin cups with a low fat non stick spray (I use the 8 mini loaf pan instead). In a bowl, combine dry ingredients and blend well. Beat egg with the yogurt, sweet potatoes and honey until smooth. Add the rest of the wet ingredients and mix well. Stir sweet potato mixture into dry ingredients and blend until moistened. Bake 15-20 minutes or until brown.
Makes either 12 muffins or 8 mini loaves.
