Lemon and Honey Mustard Chicken With Rice

Ingredients
1 chicken breast1 tablespoon wholegrain honey mustardHalf a cup of lemon juiceHalf an onion1 teaspoon of dried mixed herbsDash of black pepperDash of salt (optional)1 cup of rice
Directions
-Cut the chicken into medium slices and dice the onions

-Put a dash of oil in a frying pan and heat up
-When the oil is hot add the chicken

-While the chicken is cooking, put the rice into a pan of boiling water on a medium heat (follow directions on rice packet as each rice takes different amounts of time to cook)

-When the chicken is cooked add your onions to brown off

- When the onions are soft, add the mustard, lemon juice, pepper, herbs and salt.

- Mix together and let the flavours come through

- Cook this until the rice is done

- When the rice is cooked, put the rice on a plate and place the chicken on top

- Serve the remaining sauce over the chicken and the rice

Why not add a few steamed vegetables to this to make it really healthy?
