Barley

Ingredients
1 tsp olive oil2 TBS green onion1/4 c. dry barley3/4 c. reduced sodium chicken broth
Directions
Spray a heavy-bottomed small saucepan with vegetable oil spray, add 1 tsp olive oil and sautée 2 tbsp chopped onion (any type) until softened. Add 1/4 cup dry barley and stir for 1 minute. Add 3/4 cup low-sodium chicken broth. Boil and simmer, covered, for 35 minutes. Turn off heat and let sit for 5 minutes.
