Cucubmer Apple & Jalapeno Salad

Ingredients
1 cucumber, peeled and chopped1 Fuji (or other sweet) apple choppedJuice of one lemon3 tablespoons of raisins1/4 cup of chopped walnuts 2 tablespoons of olive oilkosher salt
Directions
Cut apples into small slices. Squeeze lemon juice over and toss to coat. Cut cucumbers into quarter rounds & add to apples along with diced, seeded jalapenos, raisins, walnuts, and olive oil. Add kosher salt and toss to coat.
