Shrimp & Scallop Fruit Ceviche

Ingredients
8 oz. (1/2 LB) Scallops, raw8 oz. (1/2 LB) cocktail Shrimp, raw1 cup fresh squeezed Lemon Juice1 cup - fresh squeezed Lime Juice3 Tbsp Cilantro, raw.25 cup diced Jalapeno Peppers2 cups - chopped/diced Red Ripe Tomatoes.5 cup - chopped white Onions2 cloves minced Garlic1 cup shredded - Yambean (Jicama).5 cup - sliced - Strawberries.5 cup - sliced - Kiwi Fruit.5 cup - sliced Mango
Directions
In a large bowl or gallon ziploc bag, add Scallops, Shrimp, Lemon and Lime Juice. Let this mixture sit in the refrigerator for a couple hours. This "cooks" your fish, so it's important to let the mixture sit overnight when the other ingredients are added.
After the fish and lemon/lime juice have marinated together for a couple hours (or longer), add all other ingredients EXCEPT fruit. Add the fresh fruit sprinkled on top before serving.
