Introduction

The best breakfast ever. This can be tweaked to your liking, if you just want egg whites, less cheese and non stick pan spray ( wich will eliminate those calories). The best breakfast ever. Ingredients

    4 medium eggs
    .5 of a medium chopped
    .25 of an oinon copped
    2 tbsp of cilantro
    1.5 medium corn tortillas
    1/3 cup of cheese
    1/4 tbsp of smart balance

Directions

scrable the eggs, set aside. chop up cilantro, tomatoes and onion, making sure the onion is put aside. spray pan with pam or use a small amount of buttter to soften and sautee the onion. you can also add jalapenos if you like heat, i left it out for people who don't. while onions are cooking, tear up the corn tortillas( you can also use 3-4 tortilla chips if you are out of corn tortillas just crush them a little bit) and add them with the tomatoes and cliantro with the scrambled eggs. when the onions are soft, if need be add the rest of butter to pan to prevent sticking and then add eggs to pan. cook as you normally would scrambled eggs, when eggs are almost done add the cheddar cheese and mix up so it is evenly incorprated. to get the best flavor it is important that eggs are cooked well and not overdone. this makes 2 servings.
Again you can make this a bit healthier if you use pam instead of butter, egg whites instead of whole eggs, or low calorie cheese or noone at all, they are good without cheese also. It is a very good meal for breakfast and all of the veggies add alot of bulk with not alot of calroies to plain old eggs to fill you up.

    Delicious but pls note you should NOT scramble the eggs first, as the author suggests. You want to add the raw eggs to the mixture later. I wanted a single serving so I used 1 large egg, 3 egg whites, 2 extra-thin corn tortillas (90 cal.), and the rest as written, w/ 1T fat-free sour cream on top. - 12/31/11
