Delicious but pls note you should NOT scramble the eggs first, as the author suggests. You want to add the raw eggs to the mixture later. I wanted a single serving so I used 1 large egg, 3 egg whites, 2 extra-thin corn tortillas (90 cal.), and the rest as written, w/ 1T fat-free sour cream on top.
