Strawberry Cake with Strawberry Lemonade Cream Cheese Icing

CAKE INGREDIENTS1 Box Classic White Cake Mix1 1/4 cup Water3/4 cup egg beaters3 TBS all natural (no sugar added) applesauce2-3 TBS lemon juice1/2 cup sugar free strawberry preservesICING INGREDIENTS1 (8oz) container low fat strawberry cream cheese1 (8oz) container sugar free fat free cool whip3/4 - 1 cup Splenda1 tsp. vanilla extract2-3 TBS lemon juice
Preheat oven to 325 degrees if using a dark coated 9x13 in pan. (Increase oven temperature to 350 if using glass pan). Spray pan with cooking spray and lightly flour.
In a large mixing bowl, combine cake mix, water and egg beaters. With mixer, beat at low to medium speed until well incorporated. Add applesauce, lemon juice, and preserves to mix and beat at medium speed until smooth (about 1-2 minutes). Pour mixture into prepared pan and bake for 34-38 minutes (until knife comes out clean when inserted into cake). **Time of cooking may vary depending on baking dish used**
While cake is baking, make the icing by combining all icing ingredients in a mixing bowl. Mix together ingredients at low-medium speed until smooth and creamy.
Once cake had baked and cooled, pour icing on top of cake and refrigerate approximately 2-3 hours. Enjoy!
