Low Fat Zucchini Bread

Ingredients
3 eggs2 c sugar1 c applesauce3 tsp vanilla2 c grated zucchini2 c flour1 tsp cinnamon1 tsp baking soda1 tsp salt1/4 tsp baking powder
Directions
Beat 3 eggs until frothy, beat in 2 c sugar, add 1 c applesauce & 3 tsp vanilla. Beat until thick and lemon colored. Stir in 2 c grated zucchini. Sift 2 c flour with 1 tsp cinnamon, 1 tsp baking soda, 1 tsp salt & 1/4 tsp baking soda. Add to mixture. Pour into 2 greased loaf pans (8x4). Bake @ 350 degrees for 1 hour, cool 10 minutes - turn out to cool.

Makes 32 half inch slices, each slice is a serving size.
