Morrocan Chicken & Chickpeas

Ingredients
11/2 tbls Moroccan spice blend1 skinless boneless chicken breast3/4 tbls olive oil1/2 can chick peas with a little bit of the juice1/2 can diced tomatoes also with a little bit of the juice1 white potato in 1/2 in cubes1/2 walla walla sweet onion chopped8 dried apricots chopped
Directions
Add oil to pot and brown chicken on medium for both sides for a couple of minutes also add onion to saute.

Remove chicken and add rest of ingredients except apricots.

Cut chicken into bit size pieces and add to pot.

Turn temp to low and stir and cover.

Let simmer for about 35 minutes, stirring occasionally.

Add apricots, stir and simmer aprox 10 more minutes.

Serves 2.
