Carly's Crustless Spinach Quiche

Ingredients
6 large egg whites6 large eggs1 1/2 cups fresh baby spinach, torn1/2 tomato, sliced1/2 tsp baking powder1/3 cup 2% cottage cheese1 1/2 Tbsp sour cream1/4 cup shredded parmesan cheese1/4 cup 2% shredded sharp cheddar cheese2 Tbsp whole wheat flour
Directions
1 - Preheat oven to 425 degrees. Whisk together all ingredients, except for spinach and tomatoes.

2 - Stir in spinach, and arrange tomato slices on top. Pour into a sprayed brownie pan, and bake for 25-35 minutes, or until cooked through.

3 - Cut into 4 pieces, and serve.

    This was great! I did add green onions and substituted plain Greek yogurt for the sour cream. It was a very large portion, even enough for hubby! - 1/14/13
