Spicy Eggplant and Black Beans

Ingredients
2 Tbsp Olive Oil1 eggplant peeled and chopped1 medium Zucchini chopped1 small red pepper, chopped1 small red onion, chopped3 cloves garlic, chopped1 green chili, seeded and chopped1/2 pkg black beans (pre cooked according to instructionschili powder to tastesalt/pepper to taste ***adopted from another recipe on spark. Original recipe called for 1 can black beans and 1 can chopped tomatoes. I used dry beans, self cooked, and omitted tomatoes.
Directions
Heat oil in large sauce pan, add eggplant and zucchini. Cook until softened. Add remaining ingredients and simmer for about 20 minutes.

Serve warm - on greens, stand alone, in a wrap, w chips, etc. Makes great leftovers when flavors have really settled in.
