Deconstructed Stuffed Bell Peppers

Quorn mince, carrots, green peppers, zucchini, sweet corn, onion, garlic, tomato sauce, mozzarella cheese
Preheat oven to 375 degrees (190 c)
put rice on to boil. Cook until al dente, not completely soft. remove from heat.
In large saute pan cook all vegetables together in olive oil until softened. Add tomato sauce and quorn mince and cook until warmed through. Add rice and about 1/4 cup water if it looks dry.
pour mixture into greased pan, cover with mozzarella cheese. cover with foil and cook for 15 minutes. remove foil and cook until cheese is brown, approx. 10-15 minutes more.
Serve with salad and pita.
