Simple Barley

2 cups pearl barley4 cups chicken broth (or vegetable to make vegetarian)2 tsp olive oil1 onion, chopped1 tbsp minced garlicPepper to tasteAny other spices to taste (I like thyme myself)
Makes approx 6 1-cup servings
Sauté onion and garlic in olive oil in large saucepan
Add dry barley, toasting in oil until slightly browned
Add 4 cups water or broth, turn up heat until water reaches a boil.
Once boiling, cover and let simmer until all the water is absorbed
Add choice of spices once barley is almost cooked
