90 calorie Lettuce Wraps, a la PF Changs

Ingredients
1/2 t canola oil1/2 green bell pepper, diced (or red)1/4 C celery, diced8 oz ground turkey (I like a 93/7 lean/fat content)1/3 C green onions, chopped3/4 t fresh ginger root, finely grated1 C mushrooms, chopped fine1/4 t red pepper flakes1 clove garlic1/4 C jicama, diced (or you could use water chestnuts)1 T Soy Sauce1/4 C Hoisin sauce1/8 C sliced almonds, crushed fine8 iceberg lettuce leaves
Directions
Saute bell pepper and celery in canola oil for 2 minutes. Add ground turkey, green onions, ginger, mushrooms, red pepper flakes, garlic and jicama. Stir while cooking for 10 minutes until turkey is no longer pink. Add soy sauce, Hoisin sauce and almonds. Heat thoroughly for 1 or 2 minutes.
Place 1/8 of turkey mixture into each lettuce leaf, roll and enjoy!
Makes 8 lettuce wraps. Yummers. Increase this recipe to feed more by figuring 1 oz of meat per lettuce wrap - decide the veggie ratios to taste (more mushrooms or peppers if you like those, etc.)
