Eggless Egg Salad

Ingredients
1 lb Extra-Firm Tofu, rinsed and patted dry1/2 c Red Pepper, finely chopped1/2 c Celery, finely chopped2-3 Tbs dairy-free mayo2 Tbs Pickle Relish (your choice of sweet or dill; I prefer dill.)1/4 tsp ground mustard (yellow would be fine)1/4 tsp salt (fine ground)1/4 tsp fresh ground black pepper1/8 tsp turmeric
Directions
Grate the block of tofu into a bowl with a cheese grater. If you don't have a grater, grab the block in one hand and take a fork to it until it is crumbles. In a larger bowl add the mayo, mustard, relish, salt, pepper and turmeric and mix together. Fold in the tofu crumbles. Add the red pepper and celery and stir to evenly distribute. Serve immediately or chill for 1 hour for maximum flavor. Tastes great on a piece of whole-wheat toast with a slice of tomato or on its own! Makes 4 servings.

    I really liked this, it did taste like egg salad. I added minced onion and dijon mustard, and used only about 1/4 cup of sweet red pepper and celery. I mashed the tofu with a fork. Also, I used light mayo. - 2/7/08

    I just made this today and I'm not a tofu fan at all and I thought it was great! I chopped the tofu though so it looks like cubes of egg. Also used curry powder instead of tumeric and added onions...I add onions to everything. This one is going to be a staple in my house for protein snacks. - 1/9/08
