Greek Style Green bean & potato stew

1 lb fresh green beans2 tbsp olive oil1/2 cup chopped onion3 medium potatoes, peeled, and cut into 4-6 wedges or cubes2 tbsp tomato paste1 1/2 cups fresh or canned tomatoes (if fresh, should be very ripe)Salt & Pepper to season
Wash and clean beans, cutting off tough ends, and cutting in half if pieces are too long.
Heat oil in a large pot. Add onion and sauté until translucent. Add beans, and stir to coat. Add water & tomatoes. Bring to a boil, reduce heat to a simmer. Cover and let cook for 20 minutes, stirring occasionally. (You may need to add more liquid to the pot, so check often)
Add tomato paste, potatoes, and seasoning. Continue cooking for 20 minutes. Serve warm.
