Pineapple Fried Rice

4 egg whites2 TBSP olive oil1 medium red bell pepper, seeded and sliced.75 cup spring onion1 cup frozen peas1 cup snow peas4 cups cooked brown rice, chilled4 TBSP fresh cilantro, chopped1 can pineapple chuncks or tidbits in juice, drained.25 cups reduced sodium soy sauce
In a wok, cook scramble egg whites and set aside.
Add oil to wok and cook onions and bell pepper and saute, add snow peas, and peas.
Add rice and cook 2 minutes.
Add 2 TBSP of cilantro and pineapple and cook 1 minute, stirring gently.
Add soy sauce.
Sprinkle with remaining 2 TBSP cilantro and serve.
