Stuffed Zuchinni with chili sauce and Parm. Cheese

1 zucchini sliced in half, and middle scooped out button and portabella mushrooms diced3/4 cups red onions diced1 TBSPN EVOO1 TBSPN Ground Chili Paste5 TBSPN Parmesan Cheesepepper to taste
Preheat oven to 350 degrees
1.) slice zucchini (save shells) and scoop out insides (reserve for later)
2.) dice up onions, mushrooms and zucchini insides
3.) heat 1 TBSPN EVOO in pan and saute diced veggies
4.) Add chili paste, parm. cheese, & pepper
5.) When almost completely cooked scoop into zucchini shells and place into oven until shells are cooked (15-20minutes)
