Zucchini Muffins

Ingredients
1-1/2 cups whole wheat flour1/2 teaspoon salt1/2 teaspoon baking soda1/2 teaspoon baking powder1-1/2 teaspoons ground cinnamon2 eggs1/2 cup mashed banana1 cup white sugar1-1/2 teaspoons vanilla extract1 cup grated zucchini- well drained
Directions
1. Grease 12 muffin baking sheet. Preheat oven to 325 degrees F

2.Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.

3.Beat eggs, banana, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared muffin tins.

4. Bake for 20 minutes, or until tester inserted in the center comes out clean.

5. Best if stored in refrigerator.
